The grapes are harvested at a more advanced stage of maturation than other sparkling wine bases. This has made it possible to obtain base wines with more controlled acidity, but still fragrant in terms of aromatic freshness. The total malolactic fermentation of the base wine has further reduced the acidity to the advantage of the softness and fullness of the flavour. The choice of tirage yeast was made by favoring certain strains that bring roundness to the taste thanks to the transfer of mannoproteins.
