TYPE OF SOIL Hills of volcanic origin, tuffaceous, rich in skeleton
AGE OF VINES From 15 to 20 years
VINIFICATION Manual harvest, in boxes, following the different ripening periods between the end of August and the first half of September. The grapes, after destemming, undergo a soft pressing. The must ferments in steel tanks, at a controlled temperature of about 18 C. The wine is refined on the fine lees for 5-6 months, in order to enrich its organoleptic characteristics.
TRAINING SYSTEM Counter-espalier, with guyot pruning
COLOR Straw yellow with greenish reflections
BOUQUET The nose gives back the sensations of the undergrowth such as hawthorn, strawberry trees, daisies and yellow fruit, with echoes of aromatic herbs.
PAIRING First courses and fish sauces, asparagus omelette, vegetarian pizza, vegetable soup
TASTE Full and elegant. The tuffaceous soils give freshness and flavor, well balanced by the natural softness of this wine. Slightly almond finish
NOTES The grapes with which the Salviano winery produces this Orvieto Classico Superiore DOC "Castello di Titignano" come from the hills surrounding the north shore of Lake Corbara. The different varieties are harvested separately, as soon as they reach the optimal degree of ripeness.
