GRAPES: Sangiovese 50%, Merlot 25% and Cabernet S. 25%. VINEYARDS: 20 years. ALTITUDE: 350 meters. asl. TERRAIN: Hilly soil rich in skeleton, well ventilated, presence of limestone. EXPOSURE: South-West. TRAINING SYSTEM: Spurred cordon. HARVEST PERIOD: End of September, first week of October. VINIFICATION: The de-stemmed grapes are vinified separately in steel barrels at a controlled temperature below 30°C. The wines undergo alcoholic and malolactic fermentation spontaneously in steel before being decanted separately into oak barrels. AGING: In 30 Hl oak barrels for 12 months. In bottle 6 months. ALCOHOL CONTENT: 14% vol. PRODUCTION: 4,000 bottles. SERVING TEMPERATURE: 18°C. COLOUR: Intense ruby red. It leaves a trace on the walls of the glass where a crown of tears forms. SMELL: Clean, fascinating and complex, it opens with aromas of spices fused with hints of red and ripe fruit. Blackberry and marasca cherry, accompanied by delicate notes of plum and floral hints of violets. TASTE: Softness is followed by a sensation of volume which fills the mouth well. Well present but enveloping and warm tannins supported by a good acidity which suggests a good aging capacity. Good persistence and length that completes the tasting leaving the mouth pleasantly dry.
