VINIFICATION Hand harvested from the first week of October. Maceration and fermentation for about three weeks in steel vats.

BOUQUET Attractive and refined olfactory range, blackberries and blueberries, plums in jam, red pepper, wet earth, juniper, cloves, cigar tobacco and an elegant balsamic finish.
PAIRING Lamb and kid goat in the oven, grilled meats, kebabs and lamb chops, first courses with meat sauce.

AGING Aging 16 months partly in 25 hl oak barrels. and partly in new and second passage barriques and tonneaux. Final stop in 25 hl oak barrels. and one year in the bottle before release.
