TYPE OF SOIL The soil is formed by a high percentage of clay and, characteristic of this higher area, by a rich presence of stones.
AGE OF VINES 18 years
VINIFICATION The must obtained from the pressing of the grapes, selected through the de-stemming operations, ferments in stainless steel containers at a controlled temperature. The final refinement has a short duration of a few months and is carried out in steel tanks.
COLOR Brilliant red, not very intense and deep but very bright and vivid
BOUQUET Wild berries, red flowers and hints of licorice.
PAIRINGS It can be drunk both with cooked dishes and with cold cuts or cheeses for aperitifs and snacks. Served slightly cooler, even with fish.
TASTE Upon tasting it enters with a subtle and very delicate body, characterized by a refreshing, juicy, fragrant and slightly savory sip, with a soft tannin that makes the drink round and smooth.
NOTES The name Groppello derives from the word groppo, that is knot from the local dialect. In fact, the bunch of this native grape is very tight and compact, with small grains and a thin skin. It is a delicate grape, with low acidity, which asks to be vinified with delicacy and attention in order to safeguard the characteristic freshness, the aromas dominated by red fruit and with a note of black pepper to make them more fascinating.
