PRODUCTION AREA Municipality of Randazzo (CT), north west side of Etna Altitude: 600 meters above sea level
VARIETY 80% Nerello Mascalese, 20% Nerello Cappuccio
TYPE OF SOIL Volcanic rich in skeleton. Dark soil born from the disintegration of ancient lava flows coming from the volcano.
AGE OF VINES 30 years
VINIFICATION 60% yield in must, fermentation with maceration of the skins by pumping over and delestage for at least 40 days.
TRAINING SYSTEM Etna sapling
COLOR Intense ruby red color with garnet reflections.
BOUQUET Elegant and spicy nose, with important notes of lacquer perfectly blended with ripe red fruits and spices.
PAIRINGS Excellent with well-seasoned red or white meats. It goes perfectly with medium-aged cheeses, rock fish, soup and tuna.
TASTE In the mouth it is immediately ready and confident; the tannins, always important, are round and gentle with a slightly ethereal finish.
NOTES Elegant wine, perfect portrait of the territory in which it is produced.
AGING 6 months in steel with spontaneous malolactic fermentation, passage in tonneaux for 6 months and subsequent refinement in the bottle for 12 months.
