AGE OF VINEYARDS One of the oldest vineyards of the company from 50 to 65 years.
VINIFICATION Great importance to the cultivation of the vine, strict manual selection of the grapes both in the vineyard and in the cellar, destemming-crushing, fermentation and maceration. Malolactic fermentation follows in December.
TRAINING SYSTEM Guyot with espalier
COLOR Ruby red color with light garnet reflections
BOUQUET Balsamic aromas, notes of licorice and chocolate accompanied by a pleasant mix of small red fruits.
PAIRINGS Red meats, aged cheeses, Game.
TASTE Rich, precise, with great balance, consistent with the nose and with solid tannins, very persistent finish.
NOTES The Rocche di Castiglione vineyard belongs to a beautiful strip of land, overlooking the Rocche, in fact, the steep part of the hill covered by woods. In the stratigraphic horizons the mother rock is outcropping, the sedimentary soil is shallow, thin, fairly loose. Plants in the hottest periods suffer from a lack of water.
AGING Aging in 20 Hl oak barrels for a period of 30 months. Bottling in late summer, further refinement in the bottle before release for a period of one year.
