Sabine is a wine vinified by leaving the skins of Montepulciano grapes to macerate for only a few hours, this gives it a pink colour. The company is located in Porrona, in the Municipality of Cinigiano (GR), the vineyards are cultivated at about 200 m. slm with south and south-west exposure, on medium-textured soils. The production of grapes per hectare is 80 quintals, with a spurred cordon training system. The harvest takes place towards the end of September; after soft pressing, the must is fermented in stainless steel tanks at a controlled temperature of 16º C for about 15 days. The wine is kept in steel in contact with the lees for 4 months. Intense and delicate hints arrive on the nose, with fruity aromas of pomegranate, pineapple and banana, interspersed with floral notes of rose and hawthorn. The taste opens with freshness and acidity, softened by the sweet notes of red fruits and mineral aromas. Perfect as an aperitif and excellent with fish dishes, white meats and fresh cheeses.
VINIFICATION
Fermentation temperature 16° C. Duration of fermentation 20 days.
REFINEMENT
in steel tanks for 3 months.
