L’idea di creare un acetificio al Castello di Volpaia è nata nel 1984 dal desiderio di riconsegnare il giusto onore ad un prodotto tipico delle zone vitivinicole. Dopo una grande quantità di ricerche è stato adottato il metodo tradizionale di acetificazione lento a truciolo l’unico in grado di mantenere le qualità organolettiche del vino base. Nel tino dove avviene la trasformazione il vino percola più volte su tre cestelli contenenti trucioli di quercia e tralci di vite che servono da sostegno alla famiglia di batteri. Nel lento passaggio il vino si prende l’ossigeno necessario a trasformarsi in aceto. Il processo termina con l’invecchiamento di circa un anno in botti di legno che aggiunge complessità agli aromi ed al sapore. Una parte di alcool viene volutamente mantenuta per esaltare le qualità organolettica. La chiarifica e la filtrazione è molto leggera in modo da mantenere le caratteristiche tipiche dell’aceto. L’eventuale deposito è frutto di processi naturali.

Grape rediscovered a few years ago, widespread throughout the Abruzzo region. The name "pecorino" is given by the sheep's muzzle shape of the bunch and by the fact that when the shepherds passed through during the transhumance, the sheep stopped to graze the leaves of this vine.
Mastro Montepulciano d'Abruzzo DOC by Cantine Maligni is obtained from Montepulciano grapes grown on medium-textured clayey soils, in the municipality of Chieti in a planting with 1600 vines per hectare. It is vinified with destemming, crushing of the grapes and maceration with the skins for 15 days. After racking, it is aged in steel for 12 months.
Tuscan Vinsanto… a wine whose origins are lost in the mists of time. Vinsanto in Tuscany is such an important wine full of meaning that it was difficult to buy, it was an ambition to make it at home with your own hands; in every family there was a person in charge of this art, usually the father or grandfather. The hypothesized origins of this exquisite drink, as well as those of its singular name are different and are lost in the mists of time. A Sienese legend says that in the 14th century a friar distributed a wine that healed the sick, hence the belief that it was a miraculous wine, "Santo". However, it cannot be excluded that the name "holy" derives from the use that has always been made of it during Mass.
Camponibbio is a large vineyard located at high density located in the southern part of our company of Chianciano in the province of Siena. It is divided into nine plots in which different vines are grown in different clones. Each harvest, the grapes of the varieties that have responded best to the seasonal trend are chosen. The blend essentially, made up of Sangiovese, Cabernet Sauvignon and Merlot, varies year by year, in percentages and varieties.

The Chianti Riserva "Nipozzano Vecchie Viti" comes from 40-year-old vines from the Rufina area. It is an intense, full-bodied, elegant and persistent wine, animated by hints of berries, pepper, cinnamon and other sweet spices. It ages for 24 months in oak barrels
Although it has not been possible to call it by its real name for years, it has always maintained the intrinsic characteristics of the historic vine. The pleasant fine taste of bitter almond gives it its current name Almond.

Salice Salentino DOP Cantalupi is produced with Negroamaro and Malvasia nera di Lecce grapes from spurred cordon cultivated vines on alluvial soils, medium texture with areas tending towards limestone. The harvest takes place by destemming and soft pressing. Fermentation in stainless steel tanks at controlled temperature. Maceration for 12 days at a temperature of 28-30°C. Aging for at least 12 months in hl oak barrels. 30.
In the glass it has a beautiful ruby red color, very concentrated. The vegetal notes discreetly face the nose, where it is then enveloped by an iridescent fan, between fruity and spicy. When tasted it has a good structure, with a warm and enveloping sip. Wonderful with cannelloni with sheep's sauce.
In the wide and varied range of labels of the Conti Zecca winery, the wines made with native single grape varieties stand out for importance and interest. The company is investing considerable energy in this direction.
This wine takes its name from an underground hiding place, where the locals found shelter during dangerous situations. The entire farm took on the name of Rifugio, which today is a particularly suitable area for the cultivation of fine Primitivo grapes.
Every year the "Nero" of the Conti Zecca winery reaches the "finals" in the judgments of the most renowned wine guides, obtaining scores that, if they do not exceed 90 cents, are punctually very close. This year too is no exception. It is a wine that follows a long aging: it ages 18 months in French wooden barriques, one year in large oak barrels and six months in bottle.

Il “Raffa” è un'espressione pura di Passerina, che nasce tra i colli del Piceno, a 250 metri d'altitudine, come un canto che si libra nell'aria cristallina. I suoi aromi, come brume mattutine, catturano ricche sensazioni sapide e fresche, rispecchiando la generosità del territorio.

Giallo paglierino con riflessi verdolini, ha un profumo intenso, fruttato, con sottili note floreali. Finale secco e leggermente ammandorlato con eccellente equilibrio tra il frutto e la fresca acidità. Vino classico da pesce e paste asciutte. Eccelle con tutta la cucina a base di pesce, ma si accompagna bene anche con pietanze delicate a base di carne. Ottimo con gli antipasti e come aperitivo.
Realizzato da uve Montepulciano provenienti da un unico vigneto di 30 anni, raccolte alla fine di ottobre con un rendimento di circa 60 quintali per ettaro. Fermenta spontaneamente in acciaio, con l’aiuto del pied de cuve, dove macera per circa 30 giorni. Viene affinato in grandi botti (20hl) e tonneau per 14 mesi.

Also known as Traminer Aromatico, Gewürztraminer was already known in the thirteenth century for its aromatic qualities and its ability to drink, and is today, without a doubt, the most famous and well-known South Tyrolean wine in the world. In all likelihood its origins are to be found in Termeno (Tramin), from which the name "Traminer" derives.
Rich in sodium, albite is a typical mineral of the Alps, in particular of Valle d'Aosta, Piedmont and Alto Adige, where it finds the ideal subsoil for its development, proving to be a faithful ally for the vine. This Sauvignon is proof of this, presenting itself as the perfect synthesis between territory, climate and grape variety, thanks to its typicality which, in combination with albite, gives life to an authentic, complex and characterful label, capable of perfectly combining, to the gentleness of citrus and floral tones, an important structure and a strong minerality.

This sweet wine has a unique style. The red color is impenetrable, the scent evokes blackberries, dried fruit and cinnamon, the taste is of a singular balance. In fact, the dense texture of tannins imprisons acidity and sweetness and everything is confused, creating a gustatory sensation of harmonious fullness. It is thanks to the drying of Sagrantino grapes on racks that such a concentration is obtained. Originally Sagrantino grapes were used only for the making of this sweet wine, drunk on the occasion of religious ceremonies in the villages of the area.
