A Nero d'Avola with the energy and vivacity of youth, unmistakably Sicilian, capable of an inviting lightness that inspires casual combinations with simple and tasty dishes. After destemming and light crushing, the grapes are left to ferment in steel vats. After 36/48 hours from the beginning of fermentation, the temperature is lowered to around 22°C and then it gradually rises to 26-28°C during the 5 days of maceration. At the end of the fermentation the wine undergoes the normal decanting and in the following spring it is placed in barriques where it remains for about 5/6 months. Maturation in steel continues. Malolactic fermentation usually takes place at the end of October.
