The Cataldino is a Montepulciano vinified entirely in white, in complete absence of skins and fermented with indigenous yeasts. This wine is the result of the draining and the first pressing (0.2 Bar). The result is a powder pink color. Of great gastronomic versatility. The company is fighting to be able to use the name "rosa" instead of "rosato".

This new version of Pecorino is the result of a double selection: in the choice of the vineyards and in the harvest of the best grapes. The color is intense yellow and the nose exuberant aromas of passion fruit, grapefruit and bitter orange. The acid note blunted by its alcohol content makes it particularly long-lived. Excellent with aged cheeses, fried foods and red meats.

Cerasuolo produced for the first time in 1997 using the “svacata”, an addition of red vinification as used in ancient times by the farmers of the area.

Cataldi Madonna wanted to rediscover the ancient charm of this ancient red and reproduce it in a modern key with a careful look at the past.
