After 36/48 hours from the beginning of fermentation, the temperature is lowered to around 22°C and then it gradually rises to 26-28°C during the 5 days of maceration. At the end of the fermentation the wine undergoes the normal decanting and in the following spring it is placed in barriques where it remains for about 5/6 months. Maturation in steel continues. Malolactic fermentation usually takes place at the end of October.

It has a deep red color with light violet reflections, an intense, pleasant aroma with spicy and licorice notes. In the mouth, the good acidity and soft tannins make it warm, full-bodied, long and persistent. It must be served at a temperature of 18° C. It goes very well with red meats, roasts and well-aged cheeses.
