The desire to try our hand at the production of artisanal wines with historical and indigenous varieties is one of the reasons that led us to produce this Trebbiano. The grapes from the oldest vineyard we have on the farm are harvested by hand in September, and then they are pressed and pressed in order to obtain the must to be used for vinification. Alcoholic fermentation occurs spontaneously by indigenous yeasts through the preparation of a "pied de cuve", created by selecting the ripest grapes before their harvest. Since 2018 Trebbiano Fosso Cancelli is vinified and aged partly in terracotta amphorae and partly in Slavonian oak barrels.

Khaos represents excellence in sparkling winemaking interpreted by Rosarubra . This is our Theory of Everything. A journey towards the naturalness, the origin, the principle, which has always distinguished our company and which has led us to choose to always be in tune with nature and with the principles of biodynamics in which we believe. Khaos Ancestrale is a deliberately unfiltered product. Its fine and persistent perlage accompanies the harmony of the aromas of yeast, warm bread, hawthorn flowers and citrus fruits, highlighting a perfect balance that envelops the mouth with powerful acidity and freshness. All this makes the Ancestral Khaos a perfect accomplice for aperitifs, whether they are based on appetizers or more important courses. But also for a fish-based dinner, starting with appetizers. Because in the beginning, we know, it was the Khaos.

On the palate it is clear, bright. The softness it expresses in the mouth is infinite, while its acid note is persuasive.

It is the most famous white grape variety in Abruzzo and a choice, that of Cantina Tollo , to give it a version from 100% organic grapes, grown in the vineyards located on the hills of the province of Chieti. The Trebbiano harvest is carried out starting from the second half of September followed by crushing and destemming and a cold maceration, to extract as much as possible the aromatic components of the vine, known for not being among the most fragrant. And it is precisely the respect for the raw material, at Cantina Tollo , that makes the difference, culminating in the refinement in stainless steel in order not to cover or alter in any way the very essence of Trebbiano, a wine that has always made simplicity its force.
