It is a sparkling wine that originates from 100% Pinot grapes, coming from a single vineyard. The altitude and south-west exposure give us a raw material with a perfect acid balance. The coppery color comes from the brief contact with the skins during the static draining in the press. The flower must is then vinified in steel at low temperatures. The second fermentation follows the protocol of the classic method with a stay on the lees never less than 24 months.
