The grapes are harvested manually in the vineyard and carefully placed in boxes for transport to the cellar. At the end of the fermentation process, the wine is left to clarify with static settling until the end of winter. Delicious sparkling wine with a fresh and lively taste, a bright pale pink vintage with good structure and persistence, based on Glera grapes with a blend of 10% Pinot Noir. Pinot Noir is vinified in red as per the disciplinary. Etna Rosato is an excellent Sicilian wine, obtained with Nerello Mascalese grapes grown in Castiglione di Sicilia, Contrada Montedolce, on volcanic soil, at an altitude of 730/750 m slm The cellar makes use of the advice of the oenologists Andrea Delpiano and Davide Red. The vinification involves a soft direct pressing of the whole grape, with fermentation in stainless steel tanks for a period of about 15 days. Refinement always in steel tanks on fine lees for about 5 months, with weekly battonage in the first month and monthly in the last few months. In the glass it shows off a soft and bright pink. The olfactory profile is rich floral aromas, with fruity and citrus scents of pink grapefruit, pomegranate and raspberry, with hints of aromatic herbs. On the palate it is dynamic, with delicate fruit that leads towards a finish of pleasant mineral freshness. Excellent expression of volcanic wine, a label to try absolutely.
