The Roero Riserva "Printi" is one of the precious pieces of the Monchiero Carbone winery, produced starting from the exceptional harvest of 1997 and which, year after year, has been able to establish itself on the Piedmontese wine scene proving to be able to compare itself with the other more structured wines of the region , without however having to give up the typical elegance of the Nebbiolo grapes grown on the rugged hills of the Roero. The Nebbiolo grapes from which Printi is born are grown at an altitude of 350 meters on the Frailin hill, on very calcareous soils; the fermentation is always long and slow to ensure that the wine is enriched with all the natural components contained in the grape and for the refinement, which lasts at least 24 months, small woods of different passages are used. The result can only be a wine with a great aromatic, balanced baggage, to be chosen for weekend conviviality and which will certainly not disappoint expectations. It opens to the eye with a beautiful ruby red hue, intense and brilliant. After an initial ethereal attack, the nose develops a fruity bouquet with hints of raspberries and wild strawberries, followed by spicy notes of vanilla, cinnamon, tobacco and noble woods. The taste is full-bodied and endowed with pleasant softness, with good fruit in the right balance with acidity and a texture of sweet and seraphic tannins, which gradually relax, giving a long and harmonious finish. The white vinification of the noble Sangiovese grapes has generated a wine with a pale pink color, a fruity and floral bouquet, an elegant and savory taste. Given the small quantity, it has entered our Personal Edition by right.
The carefully selected grapes are pressed directly with the aid of inert gases in order to avoid any potential oxidation. The must obtained is clarified with a stop at a low temperature which allows decantation. The clean fraction is sent to fermentation with the addition of a part of skins and indigenous yeasts. During the fermentation phase, regular punching down is carried out which allows the extraction of natural tannins from the peel which preserve the integrity of the wine. At the end of fermentation, the wine obtained is decanted with the aid of inert gases and ages for 3 months on the yeasts that carried out the fermentation, followed by stabilization and bottling.

Wine makes people talk, unites people, expands the perception of time. Anyone who is passionate will experience the long chats around the emotional details that wine offers. Hours in which emotion and passion gracefully distort reality, transforming discussions around wine into pleasant journeys through history, culture and places, without moving from the table. Whenever wine is on the table, in the glass, it becomes a means for those who are passionate about it for long and passionate conversations. Culture, art, gastronomy mix with the evocation of the places where wine is produced, a virtual journey that extends for hours. Time and space confuse, wrap around flavors, colors and aromas, evoking emotions that come from often unknown lands.

Variety of Middle Eastern origin which is best expressed in Sicily thanks to the intense luminosity and uniqueness of the soils. It is a medium-late variety, ripening around the end of September. The grapes are grown both in Sambuca di Sicilia, in the province of Agrigento, and in Acate, in the province of Ragusa. In the first estate, a more mature and structured wine is obtained, while in the second, a more delicate and fruity product is obtained. The type of training used is espalier, with an average planting density of 4,500 plants per hectare. Harvesting of the grapes at perfect phenolic ripeness, destemming and alcoholic fermentation with the skins for 10-12 days at 25-26°C, malolactic fermentation with selected bacteria, maturation for 10 months in French oak barriques.
Production area: Ortona. Abruzzo Vinification: The grapes are de-stemmed and pressed very softly, in contact with the skin for about 12 hours at 3 ºC. About 80% of the must is fermented in heat-conditioned stainless steel tanks at a controlled temperature of 12 C., the other 20% in 40hl oak barrels to release a moderate 'woody' and a more refined character. Pairings: Perfect with lobster, cream of vegetable soup and smoked fish, we also recommend it with roast chicken.
VINIFICATION The maceration lasts 12-14 days in 45 quintal steel vats at a controlled temperature of 25°C, with frequent pumping over in order to extract the aromatic and coloring substances and at the same time soften the tannic mass. AGING: The wine is aged in steel tanks for one year. Before bottling, the wine is filtered, but not cold stabilized, in order to safeguard the integrity of the product. The permanence in the bottle before being marketed lasts 6 months, in aging rooms completely dug out of the limestone rock typical of the area where it was born. TASTING NOTES The nose has clear hints of fresh fruit, plums and strawberries. Strong, full, sweet and very vinous on the palate.
