Amabile del Cere is a white passito from Veneto made from various white grapes. It is a blend based on chardonnay, garganega, Tuscan trebbiano and sauvignon. The grapes are harvested at the end of September, followed by drying in wooden boxes and pressing in January, when the botritys worked at full capacity on the volume and sugar residue of the bunches. Quintarelli 's passito is then aged for 5 or 6 years in French oak. Exquisite, sublime, delicate. The fifth essence of sweetness. The amber color, the notes of bergamot, candied fruit and spices accompany a vertical, delicate and engaging sip. A passito from the past, with an enormous potential for spectacular evolution. A meditation wine to be savored on rare occasions, excellent with dry or sliced desserts.
The hand-picked grapes from the Pianella and / or Loreto Aprutino vineyards are placed in small boxes and transported to the cellar. The crushing and pressing is carried out with the aid of a small crusher-destemmer and an ancient press. The must obtained is transferred partly in terracotta amphorae and partly in used French oak tonneaux. To start the fermentation, the “pied de cuve” of indigenous yeasts previously obtained from the same grapes is added. Fermentation normally takes place in 7/10 days and the wine obtained is decanted and aged on its noble lees in 15hl Slavonian oak barrels and in terracotta amphorae. The refinement lasts about 2 years, after which the wine is decanted and bottled without filtration.

Pecorino IGP Terre di Chieti is a white grape variety, with a bright straw yellow color. It has a fruity citrus aroma, with nuances that are oriented towards tropical fruit, white peach and exotic fruits such as papaya and grapefruit. It has a persistent and very fresh taste with a slightly balsamic finish. Outstanding freshness and good structure. The acidic vein and the sapidity are balanced with an excellent structure, a good persistence and a great softness. It can be successfully paired with fish appetizers, ideal with raw and first courses.
Rosso Sangiovese Cabernet This wine is particularly atypical for the appellation. The fruit is explosive in the mouth, a blend of red and black berries and cherry, plum, while the acidity is open, making it a wine of great tension.
