For this I have decided to propose some of my best productions within this selection. The wines of Vinosophia rediscover the ancient native grape varieties, interpreting them in the most authentic way in search of the fatal attraction, seduction and memory. Of all the red grape varieties in the world, Pinot Noir is considered the most noble and elegant and at the same time the most difficult to interpret, the one that places the winemaker and the consumer in the face of perhaps the most complex tasting. The term Pinot derives from the French and translated literally means "pine cone", a name attributed due to the shape of the bunch of this grape, with very attached berries and an elongated shape, typical of pine cones.
Produced since 1990 exclusively from Pinot Noir grapes, it is, in a certain sense, the "alter ego" of Cervaro: together they represent the two different expressions of the complex and refined soul of Castello della Sala. The 4 hectares of vineyards from which it is produced are located at over 400 meters above sea level on calcareous soils rich in fossils with sands of sedimentary origin dating back to the Pliocene.

Delicate, fine, pleasantly fruity with hints of apple and yellow fruits.
The perfume is intense and persistent, complex, with fruity and herbaceous aromas, notes of vanilla and nutmeg.
The whole bunches are sent to the pneumatic press and the must is left to ferment with its indigenous yeasts at a low temperature (12-14 ° C) in stainless steel tanks with the skins for about 30 days. The refinement takes place in steel tanks on the fine lees, followed by the bottle. At tasting it has a coppery color. Intense floral bouquet, fruity with yellow pulp, ethereal hints. Fresh, intense and savory taste. Excellent to accompany seafood, cod, first courses with light sauces, white meats.
In the world, Pinot Grigio is a very common grape variety, but not in Abruzzo. Antonio decided to cultivate it and the result was excellent thanks to the perfect combination of time and soil.
White pulp fruit and floral scents accompany the pleasant freshness and flavor of this wine. The finish is reminiscent of almond. Vinification: Soft cold pressing in an inert environment, static decantation of the must and fermentation at a controlled temperature.
At sight it is opalescent light pink, tending to onion skin. The nose is intense with the scent of pink grapefruit and in the background of lychees. The taste is fresh, savory and full-bodied.
Pinotto is the sweet red of the Carboni winery: an IGT Isola dei Nuraghi Rosso Passito , obtained from an atypical vine for Sardinia, typical of central Italy with an aromatic character , which some winegrowers have started a few years to plant in certain areas of the Mandrolisai. It is a wine produced in very small quantities , only in the years deemed most suitable.
Pinot Grigio is a fat, mineral, savory and lively wine characterized by a straw yellow color. It has a very fruity aroma and the taste amplifies all the power of the territory of origin. Delicate and ethereal with a marked varietal aroma, it blends harmoniously with the fullness of the taste that characterizes all Perusini whites for their origin from hillside plots with severe farming methods.
Intense straw yellow to the eye, with subtle reflections reminiscent of antique pink. On the nose it is broad and elegant, characterized by fruity, citrus and slightly brackish notes. Soft and full-bodied on the palate, well balanced and persistent. Mineral closure. Versatile in culinary combinations, it is perfect with linguine with cuttlefish ink.
