Historic Abruzzo grape capable of giving rise to a wine of great character and personality. With an excellent gustatory structure, it stands out for its fresh and pleasant acidity and its wide fruity and floral aromas with elegant balsamic notes. Due to its peculiar characteristics it is a wine that proves to be very versatile in food pairings: excellent with all fish-based cuisine (excellent with raw), it also goes very well with aperitifs, appetizers, light first and second courses based on meat .
The name means that it is a product that originates from history. In fact, in the past years it was customary in peasant houses that, at the birth of a child, especially the firstborn, the father or grandfather of the unborn child would produce a particular wine at the first harvest, the "cooked wine". This wine was kept for years in small wooden barrels. It was opened, to offer it to diners, on the occasion of the First Communion and subsequently for the marriage of the child. Deliciously accompanied by typical Abruzzo desserts, sweets with almonds or in any case dry pasta.
Vinified in oak woods of different capacities, Yare is an important expression of Pecorino, an ancient vine, precocious and with low yields, which finds its ideal habitat in the cool and elevated hills of the Feuduccio. A limited production for a long-lived white wine with a great personality, the result of careful clonal selection.

The Bianco de “i Calanchi” is a complex wine, to which we have managed over time to give its own personality and a right balance thanks to the use of four very different grapes: Trebbiano gives it body; the Chardonnay rounds it up; the Cococciola gives it the right acidity and the Malvasia gives it the sweetness point.

To complete the range of Scacciadiavoli wines, a full-bodied and complex white was missing, to be paired with richer meals. Montefalco Bianco Scacciadiavoli is born from the assembly of Trebbiano Spoletino, Grechetto and Chardonnay (in accordance with the DOC disciplinary). A crunchy and tasty wine, which focuses on pleasantness. Wine to drink young or aged for a few years. The presence of deposits in the bottom of the bottle is natural.
That the Trebbiano Spoletino grape is of high enological interest is now a certain fact. It is an ancient vine that has only recently been rediscovered. It can be grown in the territory of Spoleto and Montefalco. In our cellar we have aimed to capture the finer and at the same time intriguing soul of this grape. We have given space to its changing and original aromas with a vinification in amphora that respects these characteristics and then we have strengthened its expressive character with an aging in untoasted wood and amphora for at least 9 months. In our opinion the result is that of a great white wine for aging, capable of surprising at every sip for its richness of facets.
With its strong personality, Hedòs affirms Cerasuolo as the absolute protagonist.

GEO , as a fair recognition to an international wine that takes the characteristics of the cultivation terroir and its winemaker. Chardonnay is one of the most versatile grape varieties which, depending on the cultivation style, are able to give musts with a very different structure. The type of vinification used is then able to enhance some of the characteristic tasting markers of this grape.
LIMITED EDITION - Produced by the Il Palagio estate owned by the singer Sting, these wines are not only collectible, but also spectacular flavors.
The hand-picked grapes from the Pianella and / or Loreto Aprutino vineyards are placed in small boxes and transported to the cellar. The crushing and pressing is carried out with the aid of a small crusher-destemmer and an ancient press. The must obtained is transferred partly in terracotta amphorae and partly in used French oak tonneaux. To start the fermentation, the “pied de cuve” of indigenous yeasts previously obtained from the same grapes is added. Fermentation normally takes place in 7/10 days and the wine obtained is decanted and aged on its noble lees in 15hl Slavonian oak barrels and in terracotta amphorae. The refinement lasts about 2 years, after which the wine is decanted and bottled without filtration.
Spontaneous fermentation, without added sulphites, it goes well with traditional Abruzzo first courses, medium-aged cheeses, white meats, fish broth.
