The only organic wine certified for biodiversity in Abruzzo. The winery selects the yeasts on pollen from the local flora. The bee collects the nectar of the flowers and, to preserve it, uses lactic ferments and yeasts, a practice that is a million years old. From this pollen the yeasts are selected for the fermentation of this wine. Ideal with raw and fried fish, risottos and medium-aged cheeses.

Plenus Passerina of the Azienda Marina Palusci is a wine obtained with spontaneous fermentation with indigenous yeasts present on the skins of the grapes themselves.
Young version of the historic Testarossa line, the passerina finds its highest expression in the territory of Capodacqua (AQ). Its freshness ranges from herbaceous to mineral, with characteristics of great finesse and elegance.
At the tasting it presents a brilliant color with pale greenish-yellow reflections. Very fine, fruity bouquet, with a hint of ripe apple characteristic of the vine of origin. Pleasantly fresh taste on the palate, it maintains an aromatic and gustatory persistence. It goes well with any fish dish and is excellent as an aperitif.

Passerina Spumante Brut is a Charmat method also known as “Martinotti”. Passerina has a notable hint of minerality on the palate.
Our Passerina Colle Trà comes from an ancient “spargolo” cluster clone, the so-called “trebbiano scienciato”. Compared to the compactness of the traditional grape, the spargolo has a more elongated shape and is less subject to rot that can occur with humidity. The passerina must undergoes a spontaneous fermentation process, triggered only by indigenous yeasts, the same for all the wines of the Colle Trà line.

The Passerina vineyards are located in the cooler areas of the Casalbordino area with exposure mainly to the north with medium-textured, loose and fresh soils at an altitude of 100-150 meters slm sea level The harvest takes place in the second half of September, when full maturity is reached technological, with manual harvesting in the coolest hours of the day. Destemming of the grapes and contact of the skins with the must for 8 hours at a T° of 12 °C, separation of the must from the skins, clarification by decantation and transfer of the clear must into a steel tank for alcoholic fermentation at a T° of 16 °C with inoculation of selected yeasts. 4 months in steel tanks in contact with the fine lees, aging in the bottle for about 20 days before being released for consumption. It has a brilliant straw yellow colour. On the nose a delicate, fine bouquet, with floral sensations and fresh notes of ripe tropical fruit. Harmonious, balanced, soft and fresh, with good body and persistence.
