That the Trebbiano Spoletino grape is of high enological interest is now a certain fact. It is an ancient vine that has only recently been rediscovered. It can be grown in the territory of Spoleto and Montefalco. In our cellar we have aimed to capture the finer and at the same time intriguing soul of this grape. During cooking, an egg is often added, cooked directly in the sauce, and this recipe is known today as "egg in purgatory".
