Of straw yellow hue with evident greenish reflections, it is crossed by excellent luminosity. The olfactory baggage is intensely perfumed, especially fragrant, floral and fruity sensations stand out. Notes of acacia and yellow rose, white-fleshed peach and a clear almond aroma are perceived, typical of the Verdicchio vine. At the end, a light vegetable touch. The flavor is distinguished by the complexity of the aromas, the persistence and above all by the important savory timbre which will determine durability and elegance in the evolutionary capacity; in the final, fresh and enveloping, a pleasant citrus scent emerges.

Around the 12th century, an ancient villa known as “il castellare de Ylice” stood near our cellar. The name was probably due to the Latin term ilex (holm oak), a particular variety of oak very common in our area. To date, no trace has remained of this historic villa, but the passion and respect we have for our territory has prompted us to pass on the name of that ancient presence.

Manual harvest. Destemming and low temperature fermentation. The crushed grapes remain at a low temperature for a few hours before fermentation, after which the soft pressing takes place. Fermentation continues at around 18°. It remains three months in steel before being bottled. After bottling it remains in cavea karso for another 2 months.

The White Angel is a Cuvè, it is aged in wooden barrels and is cared for and harvested according to the lunar tides. It is fresh, fruity and smooth to the taste. The palate shows spring flowers and a hint of caramelized citrus. At the same time, the grapes give the cuvée a beautiful minerality and volume. We can recommend this great expansion with seafood, shellfish or grilled fish.

W'Heart! in the rosé version it is an excellent wine produced with 100% Primitivo grapes. The harvest is done manually in the first ten days of September. After destemming, fermentation takes place in stainless steel tanks at a controlled temperature, and before soft pressing, the must is left to macerate on the skins for about 10 hours. A rosé that excites the eye with its splendid intense coral color with violet reflections. It offers the nose sweetly fruity hints mixed with delicate floral notes. On the palate it has a pleasant freshness. A perfect aperitif glass that also lends itself beautifully to fish-based dishes.

It is a sparkling wine obtained from Pinot Noir grapes, fermented for a prolonged period in an autoclave using the Charmat method.

This is followed by clarification and controlled fermentation. The second fermentation takes place in an autoclave at a controlled temperature (17°C). Ageing: No ageing, young wine.

Production notes The vine is 100% Croatina grown in the most suitable areas of the Oltrepò Pavese on a mixed type of soil tending towards clayey limestone. The vineyards are trained with low-yield espaliers (50-60hl/ha). Manual harvest when perfectly ripe, usually at the end of September/first week of October. 4-day maceration in contact with the skins and alcoholic fermentation at a temperature of 25°C. The second fermentation takes place at a controlled temperature (16–18°C). Tasting notes The sparkling Bonarda Oltrepo' Pavese by Berté Cordini has an intense ruby red color with violet hues. Intense bouquet reminiscent of violets, cherries and wild berries. The taste is full and lively.
