The grapes are softly pressed and then fermented at a controlled temperature in steel tanks.On the nose our Pecorino opens with great aromas of white peach, pear, pineapple, fuji apple and acacia flowers. It is perfect for an elegant aperitif with a selection of soft and semi-soft cheeses accompanied by spicy vegetables.

Cabernet Franc from the Letrari winery is a representative wine of the Trentino area, where the company has its vineyards, located to be precise, in the province of Rovereto. It can count on 23 hectares of vineyards on which the typically Mediterranean microclimate and the soil with a particular composition and very rocky act simultaneously to give life to excellent grapes. As suggested by the name itself, this wine is born purely from the Cabernet Franc vine after a long and complex winemaking process which involves maceration in steel and a series of delicate pressings to obtain all the most important components of the grapes; at the end a one year aging in oak barrels followed by six months of aging in bottle before being marketed, gives this wine special organoleptic qualities. Cabernet Franc is a large red with a compact ruby color that demonstrates the consistency of this wine; the taste is well structured and soft. Precisely for these characteristics it is particularly suitable to accompany meals.

Montepulciano d'Abruzzo Serranella is a label produced with 90% Montepulciano d'Abruzzo and 10% Sangiovese grapes. The vineyards are located in the heart of the province of Chieti, between the Maiella National Park and the Adriatic Sea, in a hilly area, with an average altitude of 230 meters slm , on mainly clayey-limestone soils. After the manual harvest, the bunches are destemmed and softly pressed, followed by maceration on the skins at a controlled temperature, in stainless steel tanks. The color that stands out in the glass is a ruby red with brilliant violet hues. The nose explodes with ample aromas of red fruit and fine spicy notes. It is a wine with a good structure, soft, balanced and with a long persistence. Per questo il 30% delle uve vengono vendemmiate quando hanno raggiunto una maggiore maturazione in confronto a quelle raccolte per produrre la classica base spumante, questo apporta volume e complessità. Vengono poi utilizzate botti vecchie, ciò aiuta lo Chardonnay ad avere la fase ossidativa prima della presa di spuma, mentre per aumentare la complessità olfattiva vengono mischiate con piccole partite di Chardonnay di precedenti raccolte. I vigneti sono coltivati sulle colline pedemontane ghiaiose calcaree di Mezzocorona, colline Avisiane Trentino Alto Adige, ad una altitudine di 200-500 m s.l.m. I vitigni sono allevati a pergola trentina semplice e la vendemmia viene effettuata manualmente nella prima decade di Settembre. La vinificazione prevede una pressatura soffice con frazionamento dei mosti, fermentazione in barrique per un quarto della massa, con affinamento in acciaio inox e barrique vecchie prima del tiraggio; infine avviene un periodo di circa 24 mesi di affinamento sui lieviti. Nel calice sfoggia una bellissima veste di colore giallo paglierino, con perlage fine e persistente. Il profumo si rivela particolarmente intenso e complesso, lievemente agrumato, con sentori di mela cotta e dolci di pasticceria. La spuma è molto avvolgente e fine. In bocca risulta estremamente morbido, merito di una buona struttura ed equilibrio acidico. Estremamente fresco nella beva. Questo è l’OM DE FER: un metodo classico nato per dare gioia e piacere!
